Battered Salted Cod Fish Cakes with Remoulade

Ingredients

Remoulade

Method

  • Cut the salted cod, potatoes, and carrots into pieces, and roughly chop the onions. Cook everything in water until the potatoes are tender, about 20 minutes.
  • Drain the water, let it steam off, and mash the mixture until you have a shaping paste.
  • Mix in finely chopped parsley and curry, and taste with a little salt and pepper if needed.
  • Using two spoons, shape small oval patties. Dip them in beaten egg, then in bread crumbs to coat completely.
  • Fill a high-sided frying pan with sunflower oil to about 2 cm depth, and fry the fish cakes on all sides until golden.

Remoulade

  • Finely chop the anchovy, and chop the capers and pickles.
  • Mix all the remoulade ingredients well and taste with lemon juice, sugar, salt, and pepper.
  • Serve the salted cod fish cakes with homemade remoulade.
