Pasta with Lobster and White Sauce

This pasta dish is elevated with lobster in béchamel sauce, traditionally known as white sauce. The dish itself is luxurious, but the recipe is surprisingly simple to prepare. All our recipes are sourced fromgodfisk.no

Method

  • Crack the lobster claws with the back of a knife. Hold onto the claw hinge and twist the claws off the lobster. Break each joint of the claws to make it easier to extract the contents.
  • Place the lobster on its back and cut from the middle out towards the tail tip with a sharp, heavy knife. Then, cut from the middle forward towards the head.
  • Remove the stomach sac located at the front of the head, and the intestine along the back. Clean the lobster meat from the shell.
  • Cook the pasta according to the instructions on the package.

White Sauce

  • Bring milk and fish stock to a boil in a saucepan, together with parsley, pepper, and bay leaves. Set the milk mixture aside.
  • Melt butter in a saucepan and stir in flour.
  • Gradually add the milk mixture, little by little.
  • Let the sauce simmer gently for about 20 minutes on low heat.
  • Remove bay leaves, and fold in lobster meat and pasta just before serving.
  • Serve the pasta with finely chopped basil and a squeeze of lime juice.
