Pasta Salad with Hot-Smoked Salmon

Method

  • Break the hot-smoked salmon into small pieces.
  • Cook the pasta according to the instructions on the package.
  • Wash and clean cherry tomatoes, bell peppers, and cucumbers. Cut the tomatoes in half, and dice the peppers and cucumbers.
  • Wash the salad greens and cut them into strips.
  • Place the salad ingredients in a salad bowl and distribute the salmon pieces on top.

Sour Cream Dressing

  • Squeeze the juice of a lemon. Peel and finely chop the garlic. Mix together crème fraîche and lemon juice.
  • Stir in the finely chopped garlic and sugar.
  • Season with pepper and possibly a little salt.
  • Finely chop the basil leaves and fold them into the dressing.
  • Mix the dressing into the salad and garnish with a few basil leaves if desired.
  • Serve the salad with crusty bread on the side.
