  • Preheat the oven to 180 °C.
  • Cut the onion into wedges, roughly chop the garlic, and cut the carrots, parsnips, celeriac, and celery root into sticks.
  • Mix the vegetables with salt, pepper, oil, and thyme, and place in an ovenproof dish. Put the dish in the oven and roast for about 40 minutes.
  • Slice the salted cod into portions. Crush the whole peppercorns in a mortar, sprinkle over the fish, and press them well into the fish.
  • Sear the salted cod in oil, pepper side down, for 2 minutes. Place it on an ovenproof dish with the pepper side up and finish cooking in the oven alongside the vegetables, for about 20 minutes.
  • Serve the salted cod with the vegetables and boiled potatoes.
