Poke bowl with spicy salmon

Method

  • Cut the salmon into cubes.
  • Cook the rice according to the instructions on the package.
  • Dice mango, cucumber, and avocado, and slice the spring onion into rings.
  • Mix lime juice, brown sugar, fish sauce, and Sriracha chili sauce, then fold in the salmon cubes.
  • Place rice in a bowl and top with cucumber, mango, avocado, and salmon.
  • Finish with a sprinkle of sesame seeds, and serve with soy sauce and pickled ginger on the side.

Chef's tip:Feel free to try other types of fish and seafood. You can also combine several seafood varieties in the same bowl. Poke bowls are also an excellent way to use up vegetables you have leftover in the fridge. If you're serving many people, the dish can be presented on a large platter so everyone can help themselves.
