Salmon Salad

When the lunchbox is packed with a bit of care, it tastes even better. How about making a salad with salmon and homemade dressing? Simple and very delicious! All our recipes are sourced from godfisk.no

Method

  • Preheat the oven to 170°C.
  • Sprinkle the salmon with salt and sugar, then bake in the oven for about 10 minutes.
  • Let the salmon cool in the refrigerator and then cut into pieces.
  • Cut cucumber, plum tomatoes, and heart of romaine lettuce into pieces and place in a salad bowl.
  • Add the salmon and croutons to the salad.
  • Finely chop shallots and grate Parmesan cheese.
  • Mix all the ingredients for the dressing, seasoning with salt and pepper. Serve the salad with the dressing.

Tip:Leftovers from the salmon dinner can also be used in the salad.
