Hake with root vegetables and dill sauce

Method

  • Set the oven to 200 °C.
  • Cut the hake into pieces.
  • Finely chop the dill, squeeze the lemon juice, and dice the parsnip, rutabaga, carrot, and celeriac.
  • Place the fish pieces and root vegetables in a greased, ovenproof dish.
  • Melt butter, stir in flour, and add fish stock gradually.
  • Let the sauce simmer for 3-4 minutes, then add cream and bring it to a boil.
  • Stir in dill and season with lemon juice, salt, and pepper.
  • Pour the sauce over the fish and vegetables, and bake in the oven until the fish is cooked through and the vegetables are just tender, about 15 minutes.
  • Serve with boiled potatoes.
