Pollock Burger with Tomato Salsa and Rice

Method

  • Divide the fish fillet into pieces and place the pieces in a food processor.
  • Add salt and run the machine until the mixture is smooth and sticky — it only takes a few seconds.
  • Add cold milk in a steady stream while the machine runs.
  • Add potato starch and pepper, and any other spices or flavorings.
  • Form a small test patty, fry it, and taste to see if it’s seasoned to your liking.
  • Shape flat patties and fry them in melted margarine, 2-3 minutes on each side.

  • Wash, clean, and finely chop onion and garlic, chili, and coriander.
  • Strain the juice from the canned tomatoes.
  • Sauté finely chopped onion and garlic in oil over low heat.
  • Add chili and tomato, and let everything simmer for 3-4 minutes.
  • Season with salt, pepper, and sugar.
  • Stir in finely chopped coriander.
  • Serve freshly cooked pollock burgers with tomato salsa and rice on the side.

Tip:You can vary this recipe with fillet of pollock, salmon, herring, or mackerel, combining one or two types of fish.
