Herring with Barley Salad

Ingredients

Barley Salad

Method

  • Preheat the grill.
  • Grate the ginger and mix it with rice vinegar.
  • Add the herring to the mixture and marinate for 10-20 minutes.
  • Remove the herring fillets from the marinade, rinse them and pat dry with paper towels.
  • Quickly grill the herring on high heat.

Barley Salad

  • Rinse the barley and soak in cold water for 1 hour.
  • Cook the barley according to package instructions and let it cool.
  • Slice the chili thinly and roughly chop the coriander.
  • Place the whole cucumber on the grill and let it roast until blackened.
  • Cool the cucumber, scrape off the charred skin, and cut in half.
  • Remove the seeds and cut the flesh into small cubes.
  • Combine the cooked barley, chili, coriander, and cucumber, then fold in olive oil.
  • Adjust the flavor with lime juice and salt.
  • Serve grilled herring with barley salad, and feel free to sprinkle extra chili and coriander on top.
