  • Rinse the pickled herring in cold water and cut into pieces.
  • Preheat the potato flatbread.

Salsa

  • Blend coriander and sunflower oil until smooth using a blender or immersion blender.
  • Grill the corn cob until golden, then cut off the corn kernels.
  • Slice the spring onion thinly, finely chop the chili, and squeeze the lime juice.
  • Combine all ingredients, and season with lime juice, salt, and pepper.
  • Fill the flatbreads with corn salsa, curry sauce, and herring pieces. Roll them up, cut into smaller pieces, and serve.

Tip:Insert a cocktail stick through the flatbreads, and sprinkle with some coriander and curry sauce. You can also use matjes herring in this recipe.
