  • Cut the coley into strips.
  • Peel and cut potatoes into wedges.
  • Slice onions into thin wedges, julienne the bell peppers, and chop garlic.
  • Bring canned tomatoes to a boil with garlic, tomato paste, olive oil, and cayenne pepper.
  • Add potatoes, onions, and bell peppers and let simmer for about 10 minutes.
  • Add the coley and let it simmer for 3-4 minutes.
  • Stir in olives, and season with salt and a hint of cayenne pepper.
  • Serve the coley stew piping hot with bread on the side.
