Ingredients

Salad

Method

  • Preheat the grill.
  • Cut the salmon into serving pieces, scrape the scales off the skin, and rinse and dry the fillet thoroughly.
  • Grate the ginger and mix with soy sauce in a bowl. Add the salmon, turn the pieces so the marinade coats them, and let sit for 5 minutes.
  • Fold a piece of heavy-duty aluminum foil into four layers, about 15 cm in size, and brush with oil.
  • Remove the salmon pieces from the marinade, let excess drip off, and place them on the foil with the skin side down.
  • Grill the salmon on the foil for about 2 minutes until just cooked through. Do not flip the fish.

Salad

  • Cut the salad and drizzle with lemon juice and olive oil.
  • Sprinkle with finely chopped chives, a pinch of salt, and freshly ground pepper.
  • Serve the salmon with the salad on the side, and optionaly sprinkle with a little chives.
