Spaghetti with Mussels

Method

  • Scrub the mussels and check that all shells are closed. Discard any suspicious shells.
  • Cook the spaghetti according to the package instructions.
  • Finely chop shallots, garlic, and chili.
  • Sauté shallots and garlic in butter until translucent in a saucepan, then add chili and mussels.
  • Pour in white wine and let the mixture simmer for 6-8 minutes.
  • Gently shake the saucepan during cooking so the shells mix. Discard any mussels that do not open.
  • Add heavy cream and parsley, and heat the mixture gently.
  • Place the spaghetti in a bowl and ladle the mussels with sauce over it.
  • Serve the spaghetti topped with grated Parmesan cheese and bread.

Tip:White wine can be replaced with tart apple juice.
