Grouper with Couscous Salad

Pan-fried grouper fillet with couscous salad is a healthy and delicious dinner for the whole family. It tastes especially good with a sprinkle of fresh coriander on top. All our recipes are sourced from godfisk.no

Method

  • Slice the grouper fillet into serving pieces and toss the pieces in a mixture of flour, salt, and pepper.
  • Sear the fish pieces on both sides in olive oil, about 5 minutes in total.

Couscous Salad

  • Bring water to a boil in a saucepan. Stir in the couscous, cover with a lid, and remove from heat. Let stand for about 5 minutes.
  • Fluff the couscous with a fork and let it cool.
  • Cut the tomato into halves and remove the seeds.
  • Dice the tomato flesh and bell peppers, and finely chop the shallots.

Dressing

  • Grate the lemon zest and finely chop the garlic.
  • Whisk together olive oil, apple cider vinegar, lemon zest, garlic, and spices.
  • Season with salt and toss the dressing into the salad.
  • Serve the pan-fried grouper on a bed of couscous salad garnished with fresh coriander.
