Fried salted cod with mushrooms and cream sauce

Fried salted cod pairs well with many types of side dishes, and in this recipe it is served with cream sauce, oven-baked potatoes, mushrooms, and spring onions. All our recipes are sourced from godfisk.no

Method

  • Preheat the oven to 220°C.
  • Cut the salted cod into even pieces, dry them and toss in whole wheat flour. Shake off any excess flour.
  • Cut the mushrooms into thick slices; small mushrooms can be left whole.
  • Heat oil and butter in a frying pan and fry the fish for about 4 minutes on each side.
  • Cook the mushrooms together with the fish.

Sauce

  • Mix together heavy cream, water, and Dijon mustard.
  • Once you have finished frying the fish and mushrooms, pour the cream mixture into the frying pan and let it simmer well together.

Oven-baked potatoes

  • Peel the potatoes and cut into wedges.
  • Place the potato wedges, olive oil, salt, and a little pepper in a bowl and mix well.
  • Lay the potato wedges on a baking sheet lined with parchment paper and bake in the oven for about 20 minutes.

Side Dishes

  • Rinse spring onions in cold water and cut into serving pieces.
  • Bring water to a boil with butter and salt, add the spring onions and cover with a lid.
  • Cook the spring onions for about 2 minutes; they should be just heated through.
  • Serve salted cod with fried mushrooms, cream sauce, oven-baked potato wedges, and butter-steamed spring onions.

Tip:If you've gathered wild mushrooms, you can use them instead of the button mushrooms.
