Oven-baked stockfish in Portuguese style

Method

• Preheat the oven to 180 °C.
• Cut the dried salt cod into serving pieces.
• Wash and peel the potatoes, then cut them into thin slices. Boil the potatoes for 5 minutes.
• Wash and clean the bell peppers, then cut them into pieces.
• Clean and slice the onions.
• Clean and finely chop the garlic and oregano.
• Place the salted cod pieces in a greased ovenproof dish.
• Add the potatoes, bell peppers, onions, and garlic to the dish along with the cod.
• Drizzle olive oil over the cod and vegetables, sprinkle with finely chopped oregano, and add bay leaves.
• Bake for approximately 35 minutes on the middle rack in the oven.
• Place the dish on the table, and the meal is served.

Tip:Salted cod intended for baking should be soaked thoroughly. The cooking time will be longer if the potato slices are thick and the fish pieces are large.
