Sugared Salmon with Fennel Salad

Fennel Salad

Method

  • Set the oven to 80 °C.
  • Place the salmon on a plate and sprinkle with a mixture of sugar and salt. Let it rest for 10-15 minutes.
  • Rinse the fillet in cold water and thoroughly pat dry with paper towels, then cut into small bite-sized pieces.
  • Place the pieces on a baking sheet lined with parchment paper and bake in the oven until the internal temperature reaches 40-42 °C, about 10 minutes.

Fennel Salad

  • Coarsely chop the fennel and finely dice the shallots.
  • Mix fennel and shallots, and season with olive oil, lemon juice, and salt. Add a bit of pepper if desired.
  • Serve the salmon with fennel salad, and optionally garnish with fresh herbs.
