Tex-Mex Salmon with Tortilla Chips

Method

Sweet potato 

  • Preheat the oven to 200°C convection heat.
  • Peel the sweet potato and cut into cubes approximately 2 x 2 cm. Spread the pieces on a baking sheet. Add the remaining ingredients and mix well.
  • Bake for about 20 minutes until the potatoes are tender inside and golden brown outside.

Tex-Mex Salmon

  • Cut the salmon into cubes approximately 2 x 2 cm. Toss with the taco seasoning.
  • Heat the oil in a skillet and fry the salmon cubes over relatively high heat until just cooked through.
  • Cut the avocado into cubes and slice the lime. Arrange all toppings on a large plate and top with the salmon. Enjoy your meal!
