  • Preheat the oven to 180 degrees Celsius. Place the cod fillets in an appropriate ovenproof dish and lightly season with salt and pepper.
  • Roughly chop the garlic. Then blend garlic, chili sauce, soy sauce, fish sauce, lime juice, brown sugar, and coriander with an immersion blender. Distribute about half of the sauce over the cod.
  • Place the dish in the oven and bake the cod for about 12-14 minutes. The cod is done when it flakes easily with a gentle press.

Stir-fried broccoli:

  • Wash and break the broccoli into small florets.
  • Heat a large skillet with a little oil and fry the broccoli for a couple of minutes on high heat.
  • Lower the heat and let the broccoli cook until tender.
  • Add chopped spring onions, 4 tablespoons of the sauce, and sprinkle with sesame seeds.

 

  • Serve the cod in the dish or carefully transfer it onto a small plate.
  • Arrange the broccoli around the fish and pour the remaining sauce over. Top with crispy fried onions, chopped peanuts, and coriander.
