Thai-Inspired Fish Soup

Method

  • Cut the cod into cubes, slice the spring onions into thin rings, and shred the cabbage and asparagus into thin strips. Chop shallots, ginger, and garlic, and puree them in a food processor together with coriander seeds, fish sauce, turmeric, whole peppercorns, and salt.
  • Sauté the mixture in oil in a saucepan until it smells fragrant, about 4-5 minutes.
  • Pour in fish stock, lemon juice, and brown sugar, and let the soup simmer gently with a lid for about 20-30 minutes.
  • Add the cod, spring onions, cabbage, and asparagus to the soup, and let it simmer until the fish is cooked through, about 3-4 minutes.
  • Serve the soup steaming hot.
  • The server's soup is steaming hot.
