Tomato-stewed pollock with vegetables

A tomato stew with pollock and fresh vegetables is hard to resist. Served with pasta, it makes for a simple and filling dinner. All our recipes are sourced from godfisk.no

Method

  • Cut the pollock fillet into serving pieces and sprinkle with salt.
  • Cut all the vegetables into roughly 2 cm pieces and sauté them in a little oil in a saucepan for 2 minutes.
  • Add canned tomatoes and cook until it thickens, about 10 minutes.
  • Season with salt and pepper to taste.
  • Place the pollock pieces over the vegetables and cover with a lid.
  • Let it simmer on low heat until the fish is cooked through, about 7 minutes.
  • Serve the fish with the vegetables and cooked whole grain pasta, garnished with fresh basil.
