Tomato Soup with Sklrei, Parmesan, and Pepperoni

Method

Basil Pesto

  • Blend basil, Parmesan cheese, and olive oil in a blender or with an immersion blender until smooth to make pesto.

Tomato Soup with Sklrei

  • Cut the Sklrei into approximately 2 cm cubes.
  • Finely chop the onion and garlic, and sauté in olive oil until the onion is translucent.
  • Stir in tomato paste and sauté briefly.
  • Add water and canned tomatoes, then bring to a boil and simmer for 10 minutes.
  • Puree the soup in a food processor or with an immersion blender until smooth.
  • Season with salt, cayenne pepper, and sugar to taste.
  • Add the fish to the soup and let it simmer for 3-4 minutes.
  • Serve the soup with pepperoni slices and basil pesto.
