Cod with Tomato and Pepper

  • Cut the cod into serving pieces.
  • Mix flour, salt, and cayenne pepper, and coat the fish fillets in the flour mixture.
  • Scald the tomato by making a cross cut on the top, immersing it in boiling water for a few minutes, then transferring it to cold water. Peel off the skin, remove the seeds, and cut the flesh into cubes.
  • Cut the bell peppers into cubes.
  • Fry the fish fillets golden and cooked through in a mixture of oil and butter, about 3 minutes.
  • Place the fillets aside on a plate and keep warm.
  • Sauté the tomato and bell pepper for 1-2 minutes in the fish fat.
  • Mix lemon juice with water, pour over the vegetables, and let it simmer for 5 minutes.
  • Serve the cod with the vegetables and boiled potatoes on the side. Feel free to garnish with fresh herbs if available.
