Truffle-marinated coalfish with tomato salad and herb oil

Method

  • Preheat the oven to 160°C.
  • Cut the coalfish fillet into evenly-sized pieces and drizzle with truffle oil. Let the fish sit for 10-15 minutes.
  • Place the fish pieces on baking paper on a baking sheet and bake in the middle of the oven until just cooked through, about 12 minutes.

Tomato Salad

  • Rinse and cut the tomatoes in half.
  • Whisk together oil and balsamic vinegar, stir in basil, and season with a little salt.
  • Pour the dressing over the tomatoes and toss to combine.

Herb oil

  • Whisk together chopped basil, parsley, and oil, preferably using a food processor or immersion blender.
  • Season with a little salt.
  • Herb oil will keep in the refrigerator for at least 1 week.
  • Serve the coalfish with tomato salad, herb oil, greens, and boiled potatoes.
