  • Cook the rice noodles according to the instructions on the package.
  • Cut the fish into pieces, about 3 cm in size, and sprinkle with salt.
  • Wash and clean the spring onions, then cut into 3 cm pieces.
  • Peel and finely chop the garlic.
  • Wash, peel, and grate the ginger.
  • Heat oil in a wok or large skillet and add the fish, garlic, and ginger. Sauté the fish for about 1 minute on each side.
  • Add curry paste, soy sauce, fish stock, and water. Bring to a boil.
  • Then add the cooked noodles and spring onions, and let it simmer for a couple of minutes.
  • Serve the stir-fry with fresh coriander leaves sprinkled on top.

Tip:The dish can also be made in a regular frying pan with a slightly higher edge or in a pot instead of a wok.
