Salted Cod Mantecato Three Ways

Method

  • Place salted cod, bay leaves, and sliced lemon in a pot, cover with lightly salted water, and bring to a boil. Cook for about 20 minutes, then drain. Set aside one glass of the cooking water.
  • Manually stir the salted cod with a wooden spoon or in a food processor, gradually adding the oils until the mixture attains a coarse, creamy consistency. Add a bit of the cooking water and season with salt and pepper to taste.
  • Once ready, divide the mantecato into three portions.
  • The first third is served as is, in the traditional manner.
  • The second includes finely chopped parsley, celery, and garlic.
  • The third includes finely chopped bell peppers and pickles.
  • Serve your three variations of mantecato with crispy focaccia or grilled bread.
