Bacalao

This is the perfect recipe for tomato-based bacalao with dried and salted cod in the Norwegian style. Bacalao is great if you're hosting many guests, as it's easy to prepare in large quantities. All our recipes are sourced from godfisk.no

Method

  • Cut the dried cod into pieces about 3-4 cm.
  • Slice potatoes, onions, and bell peppers, and finely chop the chili pepper.
  • Heat oil in a saucepan.
  • Layer potatoes, dried cod, onions, bell peppers, chili, and canned tomatoes in the saucepan.
  • Dissolve tomato paste in water and pour it into the saucepan.
  • Bring to a boil, then reduce heat and simmer gently for about 1 hour, or longer if desired. Occasionally gently shake the saucepan, but do not stir the bacalao.
  • Serve the baked cod with bread on the side.
