Cod in Minestrone Soup

Minestrone soup can be varied with the vegetables and herbs you have available, as well as pasta. In this recipe, we have used cod and pesto additionally. All our recipes are sourced from godfisk.no

Method

  • Cut the hake into serving pieces.
  • Bring plenty of lightly salted water to a boil in a pot.
  • Add the cod pieces, turn off the heat, and let it steep until the fish just begins to flake, about 6 minutes. The water should not boil vigorously but stay just below boiling point.

  • Roughly chop the onion, and finely chop the garlic, parsley, and chives.
  • Cut the vegetables into equal-sized cubes, about 0.5 cm in size.
  • Heat olive oil in a pot, and sauté the onion and garlic until translucent.
  • Add chicken broth and bring to a boil.
  • Add potato cubes and pasta, and let it cook for 8 minutes.
  • Add the remaining vegetables and beans, and cook for an additional 4 minutes.
  • Season with salt and pepper, and add parsley and chives just before serving.

pesto

  • Toast pine nuts in a dry skillet and let cool.
  • Blend the pine nuts, basil, garlic, Parmesan, olive oil, and lemon juice until smooth using a blender or immersion blender.
  • Adjust seasoning with salt and pepper, and dilute with more olive oil if you prefer a softer consistency.

Serving

  • Serve the Minestrone soup in deep bowls and place the fish on top. Spoon pesto over each fish piece.
