Mango Salsa

  • Mix the ingredients for the mango salsa and let it sit in the refrigerator for about 1 hour before serving.

  • Finely chop the chili and garlic, and grate the lime zest.
  • Combine the ingredients for the sour cream sauce and let it sit in the refrigerator for about 1 hour before serving.

Shrimp Fajitas

  • Remove seeds and membranes from the chili, then finely chop it, along with the garlic and scallions.
  • Cut the bell peppers into strips.
  • Sauté the vegetables in hot oil for a few minutes until heated through. Be careful not to overcook them; they should remain crisp.
  • Add the shrimp, lime juice, chopped cilantro, salt, and pepper, and gently warm everything through without boiling.
  • Serve the shrimp, mango salsa, and sour cream sauce in warm tortilla wraps.
