Herring and salmon fish cakes with risotto

Risotto

Method

  • Blend the herring fillet with the salt in a food processor until it forms a sticky dough.
  • Gradually stir in milk until it forms a firm mixture.
  • Add potato starch and finely chopped thyme, then shape into large patties.
  • Cook until golden and thoroughly cooked in butter and oil, about 3 minutes on each side.

Risotto

  • Cook the oat groats in salted water for approximately 15 minutes.
  • Drain excess water, then stir in butter and grated Parmesan cheese.
  • Cut carrots, parsnips, and celeriac into small cubes, then boil until just tender in lightly salted water.
  • Drain the cooking water from the vegetables and fold into the risotto along with halved cherry tomatoes and sugar snap peas.
  • Stir in chopped parsley just before serving.
