  • Cook potatoes until tender in unsalted water, drain, cool down, and peel.
  • Cut the potatoes into cubes, slice the leek into thin rings, dice the bell peppers, and finely chop the parsley.
  • Place the potatoes, leek, bell peppers, and parsley in a bowl.
  • Mix together sour cream, mayonnaise, mustard, and brine from pickled cucumbers to make a dressing.
  • Pour the dressing over the vegetables and mix well.
  • Fry the fish cakes in butter in a skillet until golden and heated through.
  • Serve the fish cakes with potato salad, lemon, and a fresh side salad. Feel free to garnish with some chopped chives if you have any.
