Haddock and Leek Fish Soup

A fish soup doesn't need many different ingredients to taste delicious. Here, the soup is enhanced with leeks, bay leaves, parsley, shallots, and apple cider. All our recipes are sourced from godfisk.no

Method

  • Cut the haddock fillet into strips.
  • Make a soup bouquet by tying together a couple of green leek leaves, bay leaves, and parsley. Secure with kitchen twine.
  • Chop shallots and cook them together with the soup bouquet in apple cider and water for about 20 minutes. Remove the bouquet.
  • Slice the leek into thin rings and add it to the soup along with the fish.
  • Let the soup simmer until the fish is cooked, about 2 minutes.
  • Season with salt and pepper to taste.
  • Serve the soup garnished with finely chopped dill and with bread on the side.
