Method

  • Salt the herring fillets and let them sit for about 30 minutes.
  • Finely chop all the ingredients for the salad, cut the cherry tomatoes in half, and mix everything together. Season with lime juice and fish sauce.
  • Bread the fillets by dipping them first in flour, then egg white, then panko breadcrumbs.
  • Deep-fry the fillets at 180°C in neutral oil until golden brown.
  • Mix mayonnaise and Sriracha together to make a tasty chili mayonnaise; season to get the spiciness level you prefer.
  • Sprinkle sesame seeds over the dish before serving.
