Baked cod with tomato and basil

In this recipe, the cod is oven-baked and gratinated with cheese and mustard. As always, tomato and basil are a perfect combination and an excellent accompaniment to fish. All our recipes are sourced from godfisk.no

Method

  • Preheat the oven to 180 °C.
  • Cut the cod into serving pieces and place them in a greased ovenproof dish.
  • Sprinkle with salt and pepper.
  • Grate the cheese and mix it with mustard, double cream, and finely chopped chives, then spread the mixture over the cod.
  • Bake the cod in the oven for about 15 minutes.

Oven-roasted tomatoes

  • Cut each tomato in half and place in a greased ovenproof dish cut side up.
  • Sprinkle with salt, pepper, chopped basil, and a little olive oil.
  • Bake the tomatoes in the oven together with the cod during the last 10 minutes.
  • Place the tomatoes in the same dish as the cod and serve with bread.
