Grilled Salmon in Pita Bread

Yogurt Dressing

Method

  • Cut the salmon into serving pieces, brush with oil, and season with salt and pepper.
  • Fold a piece of aluminum foil into quarters, about 15 cm in size, for each salmon piece.
  • Brush the foil with oil, place the salmon pieces on top, and grill them for about 3 minutes on each side.
  • Warm the pita breads on the grill and cut them in half.

Salad

  • Slice the tomato and roughly chop the red onion.
  • Peel the cucumber and slice it.
  • Finely chop parsley, dill, and garlic, and shred the lettuce.
  • Mix together tomato, red onion, cucumber, parsley, dill, garlic, and lettuce.
  • Combine red wine vinegar and olive oil, and season with salt and pepper.
  • Toss the dressing into the salad.

Yogurt Dressing

  • Finely chop dill and mix with yogurt.
  • Season with salt and pepper to taste.
  • Serve the grilled salmon in pita bread alongside salad and yogurt dressing.
