Grilled salmon with blueberry-marinated barley

Method

  • Cut the salmon into portion-sized pieces and season with salt and pepper.
  • Place the salmon on a piece of greased grill foil and grill for about 2 minutes on each side.

  • Cook the barley according to the package instructions and let it cool.
  • Crush half of the blueberries and finely chop the spring onions.
  • Mix crushed blueberries and raspberry vinegar in a bowl and whisk in the olive oil gradually.
  • Add the cooked barley, whole blueberries, and spring onions, and season with salt and pepper.

Dressing

  • Finely chop the parsley and mix together with crème fraîche and raspberry vinegar.
  • Taste with a little sugar if necessary.
  • Serve grilled salmon with barley, dressing, and fresh salad on the side.

Tip:Barley can be easily replaced with dinner barley. If you don't have fresh blueberries, you can use frozen ones.
