Grilled Salmon Skewers with Mango Salad

Ingredients

Mango Salad

Method

  • Let the wooden skewers soak in water for 30 minutes
  • Peel the mango and cut into cubes, mix the cubes with edamame beans and chopped chili.
  • Fold in chopped spring onions and the juice of one lime.
  • Sprinkle generously with coriander.
  • Cut the salmon, zucchini, and bell peppers into cubes and thread onto soaked wooden skewers.
  • Brush the skewers with some oil and grill or fry in a skillet. Season with salt and pepper.

Tip:If you cannot find edamame beans, you can use sugar snap peas, cucumber, or avocado.
