Grilled Skewers with Salmon, Scallops, and Cured Ham

Ingredients

Vinaigrette

Method

  • Let the wooden skewers soak in water for about 30 minutes.
  • Cut the salmon fillet into evenly sized pieces, the same quantity as scallops.
  • Cut each slice of cured ham in half lengthwise, and wrap a piece around each salmon piece.
  • Thread two scallops and two salmon pieces onto each wooden skewer.
  • Brush with oil and grill over high heat, about 2 minutes per side.
  • Brush the corn on the cob with oil and grill for a couple of minutes.
  • Cut the lemon in half and lightly grill with the cut side down.

Vinaigrette

  • Finely chop sun-dried tomatoes and parsley, and place them in an empty jar with a lid along with the other vinaigrette ingredients.
  • Shake well to combine into a thick dressing. You can also whisk vigorously.

Serving

  • Serve the grilled skewers with grilled corn, lemon, and vinaigrette on the side.
