Carrot Soup with Cod, Chili, and Ginger

A warming and hearty soup with cod. Chili and ginger add a slight spiciness to the dish. Serve with good bread on the side. All our recipes are sourced from godfisk.no

Method

  • Cut the cod into serving pieces and sprinkle salt on both sides.
  • Let the fish sit for about 10 minutes, rinse off the salt, and dry the fish well.
  • Cook the fish skin-side down in oil for about 2 minutes, turn the fish and cook for 1 minute on the other side.
  • Cut the bacon into pieces and fry until crispy.

Soup

  • Coarsely chop the onion, fennel, garlic, chili, and ginger, and slice the carrots.
  • Sauté the onions in oil until soft, then add fennel, garlic, chili, ginger, and carrots.
  • Cook the vegetables together for 2-3 minutes, then add vegetable broth.
  • Let it simmer until everything is tender, about 20 minutes.
  • Blend the soup with an immersion blender until smooth.
  • Season with lime juice, salt, pepper, and cayenne pepper.
  • Serve the soup with cod, bacon, and fresh herbs on top.
