  • Mix the fish pieces with some slices of fresh ginger and strips of spring onion and let it rest while you prepare the marinade.
  • Lightly marinate the fish with a mixture of salt, white pepper, broth powder, and optionally wine, for about 10 minutes.
  • Place the fish on parchment paper lined with aluminum foil.
  • Then mix soy sauce and vinegar into the remaining marinade.
  • Spread the marinade, now including vinegar and soy sauce, over the fish pieces and wrap the fish tightly in foil.
  • Now the fish is ready for the oven, grill, or open fire (be careful not to burn it).
  • Baking at 180°C takes about 10 minutes, depending on the size of the fish.
  • The fish should flake easily when cooked. Some marinade should still remain when the fish is ready to eat.
