Garlic Soup with Smoked Salmon

This is an exciting soup with smoked salmon. The recipe is rich in flavor, and hearty bread pairs well on the side. A sprinkle of parsley on top makes it look beautifully finished. All our recipes are sourced from godfisk.no

Method

  • Slice smoked salmon thinly.
  • Peel the potatoes and cut into cubes.
  • Finely chop the onion and garlic, and sauté in butter along with the potato cubes for about 5 minutes. Don't let it brown.
  • Mix water and the bouillon cube, then pour into the pot. Cook the soup until everything is tender.
  • Puree the soup, strain it, and bring to a boil again.
  • Stir in crème fraîche and season with salt to taste.
  • Bring the soup to a gentle boil, sprinkle with parsley, and add the smoked salmon.
  • Serve the soup with hearty bread on the side.
