Poached cod in white wine with saffron sauce

Method

  • Preheat the oven to 70°C.
  • Cut the cod into portion-sized pieces, sprinkle with salt, and let them rest for about 20 minutes.
  • Rinse off the salt with cold water and pat dry with paper towels.
  • Bring water, white wine, and lemon juice to a boil, then add the cod pieces.
  • Let the fish simmer for about 7 minutes.
  • Remove the pieces, place them on a plate, cover with aluminum foil, and keep warm in the oven.
  • Save the cooking liquid.

Sauce

  • Strain the cooking liquid, add heavy cream, and simmer the sauce until it thickens, about 5-7 minutes.
  • Stir in saffron and season with salt to taste.

Serving

  • Serve the cod in the sauce with potatoes and sugar snap peas on the side.
