Salted Cod with Rice

Ingredients

Method

  • Cut the salted cod into large pieces and cook for about 5 minutes.
  • Drain the cooking water and flake the salted cod.
  • Cook the rice according to the instructions on the package.
  • Slice the onion and finely chop the garlic, then sauté in olive oil until the onion is golden.
  • Add pesto and let the mixture simmer over low heat for about 1 minute.
  • Pour in white wine and continue simmering for about 2 minutes.
  • Mix in the salted cod, cooked rice, and chopped spring onion.
  • Serve topped with sun-dried tomatoes and olives.
