Salted Cod with Tomato Sauce

Method

  • Cut the fish into serving pieces.
  • Pour water into a pot and add a stock cube.
  • Clean and chop garlic into small pieces.
  • Add garlic, lemon wedges, apple juice, and whole peppercorns to the pot.
  • Bring to a boil and let the broth simmer for 10 minutes.
  • Place the fish pieces in the broth and let them simmer for approximately 10 minutes.

Tomato Sauce

  • Wash and peel shallots and garlic.
  • Wash and clean chili peppers.
  • Finely chop shallots, garlic, chili, and sun-dried tomatoes.
  • Sauté shallots, garlic, chili, sun-dried tomatoes, and tomato paste in olive oil in a saucepan.
  • Remove the pits from the olives and roughly chop them.
  • Finely chop chives.
  • Add chopped olives and finely chopped chives to the saucepan, along with chopped tomatoes.
  • Bring to a boil and let the sauce simmer for a few minutes.
  • Season with honey, salt, and pepper, and add cherry tomatoes just before serving.
  • Serve the fish with the tomato sauce and cooked or oven-roasted potatoes on the side.
