Creamy Vegetable Soup with Shrimp, Salmon, and Cod

This is a hearty soup based on puréed vegetables. The soup base can be prepared in advance, so all that’s needed is to bring it to a boil and add the salmon, cod, and shrimp. All our recipes are sourced fromgodfisk.no

Method

  • Cut the cod and salmon into pieces and sprinkle with a little salt and pepper.
  • Finely chop shallots and garlic.
  • Slice the leek into rings, peel and dice the potatoes and carrots.
  • Sauté shallots, garlic, leek, potatoes, and carrots in rapeseed oil until the onion becomes translucent.
  • Add vegetable broth and cook for 10 minutes.
  • Add cream and simmer for another 5 minutes.
  • Puree to a smooth soup using a hand blender or immersion blender.
  • Season with salt, pepper, and white wine vinegar.
  • Add the fish pieces and peas to the soup, and bring to a boil.
  • Let the soup simmer for a few minutes.
  • Add the shrimp just before serving.
  • Serve the soup immediately.
