Spiced Cured Arctic Char with Avocado Sauce

Method

  • Toast pepper, cardamom, Szechuan pepper, and star anise in a warm, dry skillet for about 5 minutes. Cool and grind with a spice grinder.
  • Add salt and sugar to the spice mixture.
  • Place half of the Arctic Char with the skin side down in a dish, and sprinkle with half of the spice mixture.
  • Lay the rest of the Arctic Char over it with the meat side down, and sprinkle with the remaining spice mixture.
  • Cover with plastic wrap and apply gentle pressure.
  • Refrigerate the fillets for 2 days, turning them a couple of times during that period.

Avocado Sauce

  • Remove the avocado flesh from the skin and mash it finely with lime juice and water.
  • Add finely chopped garlic, chili, and coriander leaves.
  • Season with salt and pepper to taste.
  • Slice the Arctic Char into thin slices and serve on a plate with avocado sauce and salad.
