  • Cut the salmon fillet into pieces weighing about 0.5 kg each.
  • Mix cumin, fennel, paprika, chili powder, and salt.
  • Roll the salmon pieces in the spice mixture and let them sit for 30 minutes.
  • Place some juniper branches on the grill once it has reached a good heat, and grill the salmon pieces for about 2 minutes on each side, over juniper smoke.

Cucumber Salad

  • Peel the cucumber, scrape out the seeds, and cut into strips using a cheese slicer.
  • Transfer the strips to a colander, sprinkle with a little salt, and let them drain for a few minutes.
  • Grate the lime zest and squeeze out the juice, grate the ginger, and finely chop the coriander.
  • Mix yogurt with lime zest, lime juice, ginger, and coriander.
  • Season with salt and pepper, then combine with the cucumber strips.
  • Serve the grilled salmon with the cucumber salad, and optionally garnish with some fresh coriander leaves.
