Salmon in Curry

Salmon pairs well with bold flavors, and in this recipe, it gets an Asian-inspired taste with curry and coconut milk. As a side dish, you can serve rice or whatever you prefer. All our recipes are sourced from godfisk.no

Method

  • Cut the salmon into large cubes and finely chop the onion.
  • Blanch the tomato by scoring a cross on top, dipping into boiling water for a couple of minutes, then transferring to ice-cold water. Peel off the skin, remove the seeds, and dice the tomato flesh.
  • Melt butter in a saucepan, add the onion and curry, and simmer until the onion is translucent. Stir in the flour.
  • Pour in the coconut milk and bring the sauce to a boil.
  • Stir the diced tomatoes into the sauce along with the lemon juice and soy sauce, and let the sauce simmer for 2-3 minutes.
  • Add the salmon and let it cook until done, about 3 minutes.
  • Season with curry and salt to taste.
  • Serve the salmon with chopped parsley sprinkled on top and rice on the side.
