Salmon with Cilantro Tzatziki and Tomato Salad

In this recipe, we have drawn inspiration from both Indian and Greek flavors. Tzatziki is usually made with mint, but we have taken it to new heights with coriander. All our recipes are sourced from godfisk.no

Ingredients

Tomato Salad

Tzatziki

Method

  • Preheat the oven to 180 °C.
  • Cut the salmon into serving pieces and grate the lime zest.
  • Place the salmon pieces in an ovenproof dish, sprinkle with lime zest and tandoori masala, and bake in the oven for 10-12 minutes.

Tomato Salad

  • Peel the cucumber.
  • Cut the cucumber and tomato into cubes, and the red onion into strips.
  • Mix all the salad ingredients together.

Tzatziki

  • Peel the cucumber, remove the seeds, and grate it coarse.
  • Sprinkle a little salt over the cucumber and let it rest for 15 minutes.
  • Squeeze out the excess liquid from the cucumber.
  • Finely chop the garlic and cilantro, and combine all ingredients for the tzatziki.
  • Adjust the seasoning with salt and pepper.
  • Serve the salmon with tomato salad and cilantro tzatziki.
