Salmon with Oven-Roasted Vegetables

Method

  • Preheat the oven to 180 °C.
  • Cut the salmon into serving pieces and sprinkle with taco seasoning.
  • Cook the salmon in a little oil in a skillet until just done, about 2 minutes on each side.

Oven-Roasted Vegetables

  • Cut shallots in half. Peel the other vegetables and cut into equally sized pieces.
  • Place all the vegetables in a greased ovenproof dish.
  • Mix finely chopped chili, grated ginger, olive oil, lemon juice, and vegetable broth.
  • Pour the mixture over the vegetables, toss well, and bake in the oven until the vegetables are tender, about 20 minutes.
  • Serve the salmon with oven-roasted vegetables and sour cream.
